Get Cooking on Wood: Fresh Mackerel en Papillote

Ingredients
2 mackerel fillets
2 tbsp olive oil
Fresh dill (or any other fresh herbs), chopped
1 clove garlic, crushed
1 tbsp lemon juice
1 tbsp lemon zest
Method
Mix the olive oil, herbs, lemon juice and zest together, adding salt and black pepper to taste, to make the marinade. Brush both sides of the fish with the marinade and put into a foil bag. Cook for about 10 minutes, turning the bag over half-way through. Serve with a fresh green salad
